I am tired of the lack of healthy yogurt alternatives available in Canadian stores. There only seems to be coconut and almond-based yogurts, which tend to have 0% protein and 100% sugar. Growing up on a dairy-rich diet, I still enjoy a "yogurt" parfait every now and then. I also knew one day I would figure out how to make tofu yogurt for my little girl to snack on. However, I decided that day would be today!
It turns out it is SO SO EASY!
All you need is a blender (not even a very fancy one since tofu is so soft!).
The ingredients are so simple, here they are:
Fruit
Cashews
Organic tofu
Lemon juice
Sweetener
Optional probiotic capsule
You can use frozen fruit (I used frozen mango) but I recommend thawing it first to help with the blending process. Also, you can decide how sweet to make it. I decided to add a banana and about 3-4 tablespoons of agave syrup to cover the tofu flavor better. But if you don't mind the subtle tofu flavor then you could use much less sweetener.
Blend the ingredients together for 2-3 minutes to ensure a creamy yogurt-like consistency.
Once it's blended, you could save it in an old yogurt container, large mason jar, little mason jars, or Tupperware. I would recommend eating it within 1-2 weeks.
